This site exists to publish our world-famous, family-developed, favorite chili recipe and to propagate chili discussions.

Our Origins

This chili recipe is unique, developed, and constantly improved over time. We believe in the 'continuous process improvement' philosophy which doesn't allow this recipe to be 'locked-in.' This recipe was derived from, as its origins, a selected batch of recipes that have won world championship Chili contests. First, ingredients and techniques from many of these award-winning chilis were hand-picked. Then, original modifications were made and continue to be made up to this present formulation.

THE NAME

Lastly comes the name related to our singularly most crucial ingredient and process step: beer. More specifically, a porter-style beer.

When we originally designed this perfect chili recipe, we loved and used Black Shack Porter™ hand-crafted beer from Wachusett Brewery in Westminster, Massachusetts.

While ingredient experimentation and substitution are encouraged, it won't be Black Shack Chili without a big, flavorful dark beer, black as midnight, with a thick brown head!

Every Chili batch gets a name; for me, typically, it’s named after the beer chosen, so do invent your own.

Sadly, Wachusett no longer crafts this fine beverage. I am, however, keeping the name of our core recipe.

Find yourself a great, locally-crafted dark beer; porter, stout, märzen, dunkelweizen, schwarzbier, or rauchbier. As long as it’s not to sweet or chocolaty, you will be fine. You can always use a different beer everytime you fire up this recipe — it’s highly encouraged.
